This 3 ingredient honeycomb is a really quick how to make simple honeycomb recipe and also shows you how to make honeycomb without honey. It’s also honeycomb for vegans!

This is a very simple and easy to make honeycomb that only requires golden syrup, caster sugar and sodium bicarbonate.

Honeycomb Recipe

200g Caster Sugar
125g Golden Syrup
15g Sodium bicarbonate

The most critical part of sugar work such as this is to be very cautious of temperatures, be careful not to use a too high flame as the base of the pan will radiate heat and should you have the flame too high the result could be the base will reach a much higher temperature and continue to cause the sugar and syrup mixture to rise even after the flame has been turned off.

The mixture will expand rapidly in size once the sodium bicarbonate has been added, around 4-5 times in size so ensure that your pan has the capacity to accommodate this.

I have used a digital thermometer to check on the temperature of the mixture, they have become much more affordable in recent years and can be purchased at a reasonable cost or you could opt to use a more traditional brass sugar thermometer.

Once you add the sodium bicarbonate you need to stir quickly to bring all the ingredients together and ensure the sodium bicarbonate is fully mixed in and then you need to pour the honeycomb either onto your tray or into your moulds quickly as the mixture begins to set and harden quickly once the temperature begins to fall.

As with any sugar work one of the most important things to be cautious of is high temperatures, the liquid sugar can cause serious burns if it comes into contact with skin and will also stick to skin hard and fast resulting in very serious burns.
