  • Lipa’s “quick, easy, simple” dish is perfect for lunch or dinner.

Dua Lipa is not just a Grammy award-winning, Oscar nominated pop superstar. She’s also a lover of books, writing and homecooked meals—she prides herself for making a mean negroni alongside an elegant dinner.

Lucky for us, she often shares her favorite recipes. In a recent video with Vogue, the singer shared an easy dish that she adores making. It sounds delicious, embraces summer flavors and is packed with protein, so we’re definitely on board to try it out.

Lipa says her Roasted Sea Bass on Potatoes recipe is “quick, easy, simple, perfect for lunch, dinner, whatever.” Here’s how she makes it.

“After I’ve washed my potatoes, I keep it really simple,” she explains as she chops russet potatoes. “I cut them into discs, I’ll pop all these here in the tray…and then I’ll separate them so they have some space in there.” We love this cooking technique, as giving the potatoes plenty of room in the baking dish ensures that they roast rather than steam.

With the potatoes flat on the bottom of a 9 x 13-inch glass baking dish, Lipa drizzles them with olive oil and seasons with salt before putting them in the oven for 30 minutes to roast (likely at 425°F, per our similar recipe that uses this method). While the potatoes soften in the oven, she takes a whole, fresh sea bass and cuts down the belly to stuff the fish. Lipa says she likes to add “bits of garlic” and salt inside the crevice for more flavor.

She drizzles the outside of the fish with olive oil and salt (so the skin gets nice and crispy) before prepping more vegetables. This includes smashed garlic cloves, large slices of tomatoes and chopped Kalamata olives (we’re counting them as veggies). Once the potatoes are ready, she layers the dish first with her tomatoes and garlic, then with the fish, and finally with flavor-packed ingredients on top like capers, chopped olives and a few anchovies. She pops the dish back into the oven until the fish is fully cooked through (aim for an internal temperature of 145°F to ensure it’s cooked).

To serve, Lipa plates about half of the fish alongside the garlicky, briny, roasted potatoes and tomatoes. Lastly, she tops off the dish with fresh herbs like basil and rosemary for a vibrant bite.

“That’s banging,” she exclaims after the first taste. “It’s really good. It’s just so simple and easy, and I feel like anyone can do this.”

We’re sure that we would be *levitating* after a bite of that flaky fish and crispy potatoes. Fish like sea bass are a great source of satisfying protein and heart-healthy fats, making it an underrated main dish that should star in more weeknight meals. Plus, including fiber- and antioxidant-rich tomatoes with filling potatoes makes this a complete, nutritious dinner.

Don’t have sea bass on standby? You can make veggie-packed one-pan dinners with various proteins, from chicken to salmon.
