If the aroma of toasted puff pastry, roasted apples, and nutty cheddar cheese doesn’t wake up your spirit… we’re not sure what will. These flaky puff pastry bundles will get everyone in the fall spirit, especially while sipping on amaretto sours and apple cider mimosas. I use Pepperidge Farms puff pastry because they give you two sheets, floured, and neatly folded up in the box, and you don’t have to worry about rolling out the dough (not for this recipe anyway). Here are some more tips on how to make these bundles:
Sharp cheddar is better:
Cheddar can be tricky to work with in Baking applications. A milder or medium cheddar with more moisture will aid in better melty cheese scenarios. Use this if you prefer the gooeyness of cheddar over flavor. But if you want to pair apple and cheddar together to complement one another, especially for Baking applications, then you’re better off with a sharper cheese. The shaper the cheese gets, the more pronounced the flavor. When testing these cheddar bundles, I initially used a mild cheddar since it has more moisture and melts better. But the apple, honey, and lemon overpowered its flavor. A good Cabot sharp cheddar to do the trick.
Use a sweeter apple:
I tried making this with Granny Smith apples because they’re excellent Baking apples, and I love their tart sweetness with lemon and honey. But I had to lean back on a sweeter milder apple to open up the opportunity for other flavors to pull through. Honeycrisp apples have crispy integrity and hold up great in Baking. They lean more on the sweet side so the sharp cheddar cheese and lemon zest have a place here too.
Storage:
Without a doubt, these will be gone before you get to try one yourself. But if there are leftovers, store them in a zip-top bag or airtight container and refrigerate for up to 5 days. Reheat in a 300° oven.
