This baked lemon tart recipe is a great valentines baking gift idea. Sometimes also known as a tarte au citron which in this case is lemon it is great for heart shaped baking.
This baked lemon tart recipe is great for a diy valentines gift for her or a valentines gift for him being heart shaped but you could use round sweet pastry shells to make this any time of the year.
Baked lemon tart recipe / Tarte au citron filling:
1 whole egg
1 egg yolk
Zest and juice of 1 lemon
65g Caster sugar
55g cream
This recipe makes 3 individual heart shaped tarts but can be doubled, triples and so on to either make more or to fill bigger tart shells such as a 12 inch tart which could be sliced and glazed.
The heart shaped tartlets are readily available to but all though you can easily use a regular round tartlet or even bake a 12 inch tart and slice into wedges, you would need to triple the lemon tart filling recipe for that though.
There is a need to be careful when baking the lemon tart as enough heat needs to be applies when baking to heat the egg enough to set it but even slightly over baking the egg mixture will overstretch the protein in the egg which will contract when cooling and lead to cracking when chilled.
I have glazed a heart shape on the top of the tart but traditionally the whole of the top of a citrus tart would be glazed. It was having the heart shaped cutter on the top of the tart when glazing that trapped the heat of the blowtorch and caused the tart to be overglaze but none the less I was happy with how there turned out!
