Recipe:
300g Caster Sugar
100g Liquid Glucose
150g Double Cream
45g Unsalted Butter
150g White Chocolate
You can experiment with adding things like a shot of Bailey’s or some raisins soaked in rum for alternative flavours. This recipe also works well with milk chocolate.
You’ll need to use a traditional sugar thermometer, there will be natural hot and cold spots in the mixture as it reaches temperature and a digital laser thermometer or electronic food probe may give you an erronous reading.
It’s essential for the fudge to set properly that the soft ball temperature is reached.
Take extra caution at all times when making your fudge, the mix is very hot and can cause severe burning.
The finished fudge can be stored chilled or at room temperature.
