Meghan Markle Just Taught Me the Best Trick for Fluffy Scrambled Eggs

As a fan of Meghan Markle ever since “Suits,” I was eager to tune into the Duchess of Sussex’s new Netflix show. When the trailer dropped, I knew “With Love, Meghan” would sweep me away to Montecito for a glimpse of California life. Just like watching Ina in her Hamptons kitchen or Martha walking her garden grounds, I was prepared to be both transported and inspired. And from the first frame of this new series, I wasn’t disappointed.

Even if their homes look a little *grander* than ours, all of these women are home cooks, and each has a way of making recipes accessible and relatable. They teach us tips and tricks that help us get an easy meal on the table, or throw a fabulous party and impress our guests—no matter if the ingredients came from Trader Joe’s or our own carefully tended gardens.

“With Love, Meghan,” is an eight-episode window into hosting à la Meghan. I already want to recreate everything she’s making, from the cozy one-pot pasta to ladybug crostini—and I’m only on episode three. More than anything, though, I need to try the fried chicken she whips up with Chef Roy Choi. However, it was something else in episode three that caught my ear. What was a simple throwaway comment of Meghan’s will change my breakfasts forever.

In the process of making fried chicken with tempura batter, Choi and Sussex have an exchange about why soda water is useful in cooking. As they mix “ice cold sparkling water” into rice flour, Choi confirms that this helps make the batter extra light and crispy. 

Meghan then asks, “Do you ever put cold sparkling water into your eggs before you scramble them?” to which he replies a surprised “No!” 

Sussex assures him it has the same sort of effect, adding “it helps them rise, and get a little fluffy.” Chois is intrigued, “Really? I’m going to do that.”

“Carbonated soda water is what makes the eggs fluffy. I find it works for me every time.”

Despite Choi not knowing about this trick, our Allrecipes community is one step ahead. On our Secret to Fluffy Scrambled Eggs recipe page, user Terry Dunlop gives an alternative to the simple method listed there in the review section. Dunlop explains, “My ‘secret’ for fluffy eggs was shared with me years ago by a professional chef…Vigorously whisk eggs in a bowl with salt and pepper to taste…add just a splash (about 1 tablespoon) of soda water rather than milk or water…Carbonated soda water is what makes the eggs fluffy. I find it works for me every time.”

We’ve got all sorts of tricks for fluffy scrambled eggs on Allrecipes, but this one resonates with me, as I don’t always love adding milk. I’m interested to see how sparkling water—my go-to beverage—will actually work and plan to try it next time I whisk up a batch (before I start on the fried chicken and irresistible sauces, that is.)

But first, I have to finish soaking up the rest of “With Love, Meghan.” I’m especially looking forward to the episodes featuring a gourmet taco bar and culinary icon Alice Waters. All while imagining I’m in Montecito and not, in reality, sitting under a blanket of clouds in Pittsburgh.
