For some reason we have it all in our heads that in order to make yourself healthier, you also have to work harder. Cooking a nutritious meal completely from scratch sounds like the “right” thing to do, so we grab fresh vegetables and do all of that prep work because that’s what a healthy, fiscally responsible person should do. Finding shortcuts seems like cheating. But…what if those shortcuts were the key to success? What if they actually helped you eat healthier long term?

This is likely the biggest motivation for picking up pre-cut veggies at the store. If you want to eat a healthy meal, but you don’t have a lot of time to chop and prep in the kitchen, snagging a package of pre-cut veggies is your sneaky way of getting what you want. For many recipes, the total amount of time will include the prep time it takes to get your ingredients ready to cook. But without having to actually prep, some of your favorite thirty-minute meals may start looking more like twenty minutes, or even fifteen!
They’re a Low Effort Veggie-Booster
If you can’t be bothered to prepare and cook a huge meal, grabbing a frozen meal or even takeout seems like the easier option. Depending on what you grab, some of those options may not have as many vegetables as you’re hoping to get with each meal.
