Holly’s Recipe Highlights: Loaded Fries

Flavor: These fries are savory, loaded with melted cheese, smoky toppings, and creamy sauce in every bite.

Why Make It: Frozen fries make preparation quick and easy, while the oven and broiler create a crispy base that holds up well under the toppings.

Difficulty: Easy enough for beginners and quick enough for last-minute snacking.

Technique: Bake the fries until extra crisp so they don’t turn soggy when you add the toppings.

Ingredient Notes for Loaded Fries

  • French Fries: French fries come in all shapes and sizes: regular, crinkle-cut, waffle, or steak fries all work well. Thicker fries are great for holding plenty of toppings, but may need a few extra minutes in the oven to crisp up perfectly.
  • Cheese: Sharp cheddar cheese adds the best flavor to loaded fries. Freshly shredded cheese melts extra smoothly, but pre-shredded cheese is a great shortcut for quick prep.
  • Bacon: Cooked bacon adds a smoky, savory crunch. Use freshly cooked bacon or bacon bits for a quick and easy shortcut.
  • Green Onions: Green onions add a fresh pop of flavor and color to loaded fries, while chives, diced red onion, or pickled jalapeños make an easy, flavorful swap.
  • Optional Gravy: Brown gravy gives these fries a cozy, poutine-style flavor. For the best texture, warm the gravy before drizzling so the cheese stays perfectly melty.

Flavorful Variations

  • Loaded Nacho Fries: Add jalapeños, diced tomatoes, black olives, and a scoop of queso or homemade salsa.
  • Ranch Bacon Fries: Skip the gravy and drizzle with ranch dressing before serving.
  • Poutine-Style Fries: Use gravy and swap cheddar for cheese curds.
  • BBQ Loaded Fries: Add pulled pork or shredded chicken with barbecue sauce.
  • Spicy Loaded Fries: Use pepper jack cheese, hot sauce, and sliced jalapeños.
  • Meatless Loaded Fries: Leave off the bacon and add sautéed mushrooms, black beans, or extra cheese.
  • Use a Rimmed Baking Sheet: This keeps toppings and melted cheese contained.
  • Bake in a Single Layer: Spread the fries in a single layer so they crisp instead of steaming.
  • Bake Until Crispy: Bake the fries longer than usual before adding the toppings, since the cheese and gravy add moisture.
  • Watch the Fries Closely: The cheese melts quickly under the broiler, so watch closely to ensure it doesn’t burn.
  • Warm the Gravy: Do this before drizzling so it spreads easily and keeps the fries hot.

Saving Loaded Fries

Keep leftovers in an airtight container in the refrigerator for up to 4 days. Freezing finished loaded fries is not recommended.

Reheat leftovers in an air fryer or the oven until hot and crisp. The microwave works for speed, but the fries will be softer. Add fresh sour cream and green onions after reheating.
