In this video I will be showing you how to make an irresistable sticky toffee pudding that has an extra special something added to it in the form of incorporating an ale.
The particular ale I have used is a local ale from a brewery close to me that’s sweet and spicy with a natural toffee flavour. If you don’t want to use a beer you could use coffee or if you didn’t fancy either you can just use water.
Recipe:
6oz Dates
10g Sodium Bicarbonate
½ Pint Ale (Or another liquid)
2oz Unsalted Butter
4oz Dark Brown Sugar
1oz Vanilla Essence
1 Egg
8oz Self Raising Flour
2 Teaspoons Mixed Spice
I made the puddings using individual pudding basins but if you don’t have the basins it bakes just as good as a tray bake.
Instead of the usual toffee sauce I serve mine with a butterscotch sauce which is much lighter and compliments the pudding really well, you can find the recipe here:
I served mine with clotted cream, if you dn’t have clotted cream, or if you’d prefer, you can serve the pudding with Vanilla ice cream.
