I love a good cucumber salad, but every once in a while it’s fun to change things up and this one is certain to turn some heads. It’s got all the crisp, refreshing cucumbers you’d expect, but instead of a basic vinaigrette, everything gets tossed in a fresh mango dressing with just enough habanero to wake up your mouth. It’s sweet, tangy, a little spicy, and surprisingly hard to stop eating.

Don’t let the habanero scare you off. You can make it as spicy or as mild as you want, and the sweetness from the mango keeps everything really fresh. It’s one of my favorite sides for anything coming off the grill, but honestly, I’ve been known to eat a bowl of it for lunch too.

  • Cucumber: English cucumbers or regular cucumbers both work. If using garden cucumbers with large seeds, you may want to scoop them out before slicing.
  • Red Onion: Slice it as thinly as possible for the best texture. If you prefer a milder onion flavor, soak the slices in cold water for 10 minutes before adding them to the salad.
  • Mango: Choose ripe mangoes that give slightly when gently squeezed. If they’re too firm, they won’t blend as smoothly or taste as sweet.
  • Habanero Pepper: Remove the seeds and membranes for less heat. Wear gloves while handling if you have sensitive skin, and avoid touching your face.
  • Lime Juice: Freshly squeezed has the brightest flavor, but bottled will work too.
  • Lemon Juice: Fresh lemon juice is preferred, though bottled will work too.
  • Fresh Cilantro: If you’re serving cilantro skeptics, you can substitute fresh parsley for a different but still fresh flavor.
  • Salt: Regular table salt is what I’m using here.

How Spicy Is It?

One habanero gives this salad a noticeable kick, but the sweetness of the mango helps balance the heat.

If you prefer a milder salad, use only half of the pepper or be extra careful to remove all of the seeds and white membranes before blending.

If you’re a heat lover, leave some of the seeds in or add a second habanero.

Picking the Perfect Mango

The best mangoes for this salad are ripe but still firm enough to hold their shape after dicing. A ripe mango should give just slightly when you gently squeeze it, similar to a ripe avocado. If it’s rock hard, let it sit on the counter for a day or two until it softens.

Make Ahead Tips

You can make the mango dressing up to 2 days ahead and keep it refrigerated until you’re ready to serve.

Once the salad is tossed together, it’s best enjoyed within a few hours while the cucumbers are still nice and crisp.

If you’re making it ahead for a party, wait to combine everything until just before serving.

Serving Suggestions

This salad is right at home next to anything coming off the grill. Serve it with grilled chicken, shrimp, fish, pork, or steak.

It’s also great with tacos, especially fish or shrimp tacos, and makes a fresh side for burgers or pulled pork sandwiches.

Storage Instructions

Refrigerate leftovers in an airtight container for up to 2 days. The cucumbers will continue to soften and release liquid as they sit, so this salad is at its best the day it’s is made.

Stir Before Serving if any liquid has collected in the bottom of the bowl after refrigeration.
