In this video I will be demonstrating how to make a rich, sweet and tangy lemon curd.
This recipe is really quick to make and tastes so much better than a store bought curd.
This curd makes for a great base for applications such as lemon meringue oie, lemon curd tarts etc.
Recipe:
2 Egg Yolks
100g Caster Sugar
100g Butter
1 Lemon Juice & Zest
The curd is cooked out in a bain marie, in some countries this is commonly called a double boiler.
Make sure the curd doesn’t get too hot to the point where the eggs will scramble, this will cause your curd to split and you’ll need to start again so don’t stop stirring the mix!
